Isn't Wensleydale an "appelation controlée", as it were - I mean, it has to be made there? Cheddar is (alas) generic and can be made anywhere. And a really good strong Cheddar is as good as a Wensleydale any day of the week, but so much is plastic and tasteless until you find the right brand.
When you were over here, did you ever go to Neal's Yard Dairy? They practically tell you the name of the cow the milk came from.
The British Cheese Board doesn't mention it (and they do mention it for some other cheeses), but I don't know whether that means that it isn't, or that that just isn't what they find most interesting about Wensleydale.
I *am* very attached to cheddars (and there are so many different degrees of cheddar appropriate for so many different purposes!), so I don't know that I'd trade them for Wensleydale if I had the choice, but I'd certainly like to *add* it... :-)
I didn't! Although, really, I spent very little time actually in London, so, while unfortunate, it may not be surprising that I didn't run across them. But yum!
