Class today was interesting. In that old Chinese curse kind of way. The chef instructor was back, but still sick. And on top of that, we had 4 out of 8 people back of the house. As some of you are aware,this morning was my make-up for the test I missed two weeks thanks to my duties to the porcelain god. ( Commence going on at length about nothing of consequence )

Yeah. You know what makes that week I was talking about worse? No Chef instructor. Yup. He called in sick the last two days and hasn't been in. Monday, the back of the house had no chef , but we did have a prep list. Tuesday, we had a chef that didn't know the lunch menu and no prep list. I'm coming to the end of classes rather quickly here. This Friday I have a cumulative final. The format is Mystery Basket. This means I have no idea what I have to work with until Friday morning when I walk in the classroom. At that point I have 4:15 to present a 4 course meal.
