It sounded good (including the fake cheese), but then I read "stewed tomatoes" and thought, erm, noooooo... ;)

I'm sure you could leave out the stewed tomatoes. Mr. Spraints makes me puree them because he deplores chunks.

I like homemade mac and cheese but I don't think I could make myself use Velveeta.

You don't HAVE to use velveeta.. it just melts nicely. ;-)
