Ever since I can remember a good old cup of tea has always brightened my day... after a stressful day at work what better way to unwind than sipping on a lovely brew... up until I was 14 I had never had any other type of tea other than the bog-standard brown tea... Hooray for discovering masala chai! It is probably the most comforting beverage known to man. You should check out Tealuxe, a Boston-based tea bar with about eight different kinds.

Masala chais used to be some of my favorite teas, lately though I've been digging simpler, "cleaner" flavors in green teas.

Traditional masala chai has a lot of milk in it, usually somewhere in the vicinity of 50%! In order to keep the flavor strong enough, just the spices are boiled in the water, then milk is added, then the actual tea (at least in the recipe I use).

I keep it on the stovetop too. Otherwise when the milk is added, the liquid would get too cold for the tea to steep. I've been thinking about doing it with the spices ground for a while, but haven't tried that yet. I'm guessing it really cuts down on how long you have to boil the spices. I do it for about 20 minutes now.

I was drinking a cup of Numi's Organic Spiced Assam (aka Golden Chai) as I read this. Yum!

The BF is on a quest for the perfect chai and we pick it up everywhere we see a box. I've got a cupboard of varying qualities and interpretations on the theme. I've been trying to talk him into experimenting with blending our own to find the perfect (for us) chai - ESPECIALLY as I live a mere 3 blocks from an Indian market that has a decent array of spices. He's such a foodie and loves experimenting in the kitchen, you'd think this would be an easy sell, yet it's been an upward battle.... sigh.

I find it hard to find any other teas to be honest... I had never even heard of masala chai till this year! I feel so deprived!
