What you want to use ideally is Roselle (Hibiscus sabdariffa), which is not the same varietal as the ornamental hibiscus flower.

Also, I would suspect that drying the flowers would help the bitterness. But be sure you've got the right plant, or you could be slowly poisoning yourself. Hibiscus (dried) brews up sour, and can get very puckery, but not bitter, at least in my experience.

Hibiscus (provided you have the right one) goes excellently with mint. Rosepetals and red clover (all dried) are good with it too.
