What are your preferred recipes for mulled wine?Recently I bought a bottle of red blend wine that turned out not to be to my taste for drinking, but I don't want to just pour the whole bottle out since I've only had a glass. The thought occurred to me that I could try my hand at making mulled wine, but the amount of recipes out there were a bit ( Read more... )

I hadn't thought of this, but this might be a good idea considering the wine in question has pepper notes. Any suggestions?

likewise, I have virtually no experience with mulled wines -but - what about using your favorite spice(s) as limiters when googling? When I google recipes, I usually choose 3-5 that I like, then I make up my own recipe based on those.

Use a sharp knife to heavily score the skin of an orange. Use plasters to cover cut where knife slipped. Take a shot of brandy.

Shove whole cloves into skin of orange. Use tweezers to remove stem of clove where your hand slipped. Use plaster to cover wound. Shake a tot of bradny.

Toss in a couple of cinnamon sticks. Grate lots of mutneg. use plasters to cover grated fingertip. Drnik bradny.

Sugar. Toss some in while taking a shot of barndy. Toss some badrny into the mess. Rralise pot is too small. Bake a tot of brandy. Whee!

(In non-sloshed world... do the above, except the brandy shots. Toss the lot in your slow cooker on low n slow for a couple of hours, use the brandy, rum, bourbon, whisky, or whiskey to balance out the flavours to get what you want. Use spices similarly. Enjoy!)

This looks like a great recipe to follow, especially since I've got a bottle of orange and honey flavored whisky in the freezer. Luckily I've got a large slow cooker.

Pasta sauce, deglazing pans for steak or salmon, or slipping into a beef stew would be my go tos. Mulling wine can hide a multitude of sins, but at the end of the day, you're still drinking inferior wine. Still, I would just toss into my low set crockpot sliced orange and a lemon if I had one, a cinnamon stick and a few cloves, or possibly a cardamon pod or two. A little brown sugar, brandy and/or port might also find their way in, if I had recently been reading historical fiction or cookbooks. But that's the beauty of mulled wine, it's marvelously flexible.

Edit: the shower activated back of my brain information retrieval system suggested a handful of dried fruit - cranberries, raisins, prunes, etc, depending on the flavor profile of the wine, to intensify and improve the flavor. But those are strictly optional add ins.

I am a "oh look! there's an open bottle of wine on the counter, let's chuck some in kind of cook", but there is a recipe I cadged from a cookbook years ago, that I make on purpose.

Take a piece of turkey breast fillet, or chicken, but turkey is better. Place a sage leaf on it and some pepper. Wrap in a slice of prosciutto and pan fry in butter. When the turkey is cooked through, deglaze the pan with enough Port so that you can reduce it and make sauce. Pour over turkey and serve. If you don't have Port use Marsala or Sherry, it's all good.
