6. Ubriaco - As mentioned, but not named in the last post. Washed-rind, hard, raw cow's milk cheese. Washed in a red wine. Tasty. Supplied by pianodan and drdingbat. Say, 7/10.

7. Quebec Cheddar - So the guy at the Cheese Shop keeps pushing this on me every time I go there. I finally broke down and acquired some. The Cheese Shop guy made me promise to let it warm up to room temperature first, so xhollydayx and I ate it as a conclusion to our dinner in bed tonight. It is simultaneously sharp and subtle. Is that possible? If not, make up your own damn description. What I do know was this was excellent and very well recommended. One of the best cheddars I've had. Me - 8.5/10. Her - 9/10.
