Stuffed Peppers

I organized my recipes on New Year's Day, and it only took about two years since I posted that I should do it. I have a few recipes that need to be typed up because they were hard to read or sized oddly so that they didn't fit in my recipe book, so that explains yesterday's post and this one. I generally just slice the peppers in half and fill the half shells. They tend to cook more evenly and more quickly that way.

I've done that too for my other stuffed pepper recipe, but since the meat has to fully cook anyway. It's basically fancy meatloaf in a pepper.

And given your audience, when do you make stuffed peppers anyway? :-)

I typically used about 6 peppers,if my memory serves me correctly. If they were smaller, you could easily get 8.
