You Are What You Eat: November 3 through November 9

It's another week, with another set of recipes, including one really good new one.

Sunday, November 3 - A long time ago I somehow got this Chicken Pot Pie recipe sent to me in paper format. It came out good, so it's been an occasional meal ever since. It worked well again on Sunday night. The dogs like it because they usually get pieces of boiled chicken along the way.

Monday, November 4 - The November 2019 Eating Well offered up Chicken Cutlets with Sun-Dried Tomato Cream Sauce. This was delicious - the the taste of the sauce, the texture, everything. M said it was good enough to serve people at Thanksgiving. The base recipe doesn't make any leftovers when served to two people, but otherwise no complaints whatsoever.

After dinner I hit a concert at the Beachland. I had a few beers.

Tuesday, November 5 - I dug back into the archives for the Leek, Potato & Spinach Stew, which was originally from the June 2010 Eating Well even though the website says 2016. The cup of wine boiled with the leeks and sausage really does the trick on this one.

Wednesday, November 6 - It was a two part meal. For starters, I prepared Maple-Chili Roasted Butternut Squash from the January/February 2018 Eating Well. M likes squash, and while I hate cutting it up the pre-cut boxes at the grocery store eliminate that hassle.

The main part of the meal was the Salsa-Black Bean Burgers from the January/February 2017 Eating Well. This was the second time this year I had made them. Instead of the pan, I probably should have used the panini press to make them more even (and because how often do I have the chance to use the panini press?) but they still came out quite well.

Thursday, November 7 - M was flying to New Mexico, and I ate leftovers.

Friday, November 8 - My folks were in town. We met up with gieves and darlox for some Korean at Ha Ahn. I hadn't been in years, and there are far fewer options once you've given up red meat, but it was still pretty tasty even if I did have trouble peeling the skin off the cod in my seafood soup.

Saturday, November 9 - We went to a family bar mitvah in morning. It was followed by a nice luncheon at the synagogue, which I'll count as a family part.

We weren't super hungry at dinner, but I'd already pulled out the salmon to thaw so we broiled the Miso-Maple Salmon from the November 2019 Eating Well. It was a little too close to the broiler and almost burned, but "almost" is not the same as "did" and we had snacked on a very nice piece of fish for dinner.
