I just grill it up on our griddle pan. I love the Soy Vay line of sauces for marinades. But it's also good to just brown some garlic & onions in real butter and then cook the fish in that. Then I chunk it up and add it with smallish chopped veggies to couscous or quinoa. SO GOOD.

When I was a kid, fish for dinner always meant blue gill fillets dipped in cornmeal batter and deep fried. For the longest time, if my fish wasn't battered and fried, I wasn't interested. :-)
As an adult, though, I prefer my fish grilled or seared with lemon and whatever seasonings sound good. Over the summer Meg made the first fish tacos I've ever had, topped with avocado, cabbage, and some sort of creamy dill sauce. It was one of the best thing I've ever put in my mouth.
Mmmmm seafood! I love it. I grew up on the coast as well, for me the Pacific Northwest (Alaska) with parents who loved to fish (we had an entire freezer devoted just to fish) and we ate halibut about 3 times a week. That's definitely influence my love of fish - my favorite way to eat it is some form of white fish over risotto (sp?). I love cod especially, and if I'm in the mood for it, I love blackened spices, which I didn't know existed until I moved to the East Coast below the Mason-Dixon line. Mmmmmm.
