My all-time favorite movie, for all the things I listed in my OP. I don't watch it often, though; it's too intense and beautiful, and I don't want to become insensitive to that.

When Ilsa visits Rick and is torn and throws her head back and says, "You've got to think for both of us", it almost brings me to tears.

But Rick gives up Ilsa! How is that a "win"? (You are talking about the Bogart version, not the Reagan version from a year or so before, right?)

Because he does it for the greater good. He does it for a higher cause, and in so doing, he redeems himself and finds purpose. Getting the girl is not always the happy ending. More often than not, saving the world is.
