My lemon tree had a lot of lemons on it when the cold snap came and I didn't get them picked in time. They froze on the tree.

So now I have a big bowlful of perfectly ripe but squishy previously-frozen lemons and I have no idea what to do with them...

Juice them? Are they firm enough to zest the flesh still?

Some of them are, I think. The level of squishiness seems to vary, maybe depending on where they were on the tree.
