Sweet potato doesn't seem to be a very popular ingredient for desserts. However, The soft, sweet, starchy tuber holds a special place in my heart be it savory or sweet.

Caramelized daigaku imo? Yes please

This is my first Hokkaido fair in 5 years so they're all new to me!

Ok..so I just tried the third one and there's no burnt sugar crust after all. It's basically a caramel pudding with sweet potato puree..pretty good!
