I want to go to all of those places, too, except maybe Ethiopia.

My interest in Ethiopia is mostly about history - I find the home of most semitic languages, the Coptic Church, coffee, and one of the oldest African nations to be fascinating. It's certainly not resort material though. Honestly, from what I've heard, it's probably not safe for me, either.. Ah well.

Oo, that actually looks pretty cool. Hadn't really heard of Merida before.

I sometimes want to go investigate our South American neighborhood history in general, so maybe I should add that to the list.

Is it weird, btw, that some of my objection to visiting many of our southern neighbors involve the peculiarities they inherited from the Spanish legal system?

I see it as a reason for a bit of caution, but I wouldn't avoid them altogether just because of it.
