Second- going from 252 to 230 in 3 weeks is completely unrealistic, not to mention unhealthy. The most you should be losing per week is 2 lbs. Any more than that and it is unhealthy and you are likely to gain it right back.
Third- give yourself some time. You probably have sluggish metabolism and it will take a while to see results. Are you doing CARDIO along with strength training? The only way to burn fat quickly is through a combination of cardio, strength training and eating well (*small* healthy meals everty 4 hours). If one of these 3 aspects is missing it will be A LOT harder for you.

I figured it wouldn't be too much of a stretch to double my workout routine and do it every day instead of what i used to do (four days a week). and lose 7lbs a week. given that i started this 8 days ago on the idea that i had 3 weeks til the date i set up for myself i thought it achievable.
and back then i did it all on a diet of diet soda and buffalo tenders (not kidding). now i cut out the buffalo tenders and im only drinking half the diet soda i used to. i figured it was an improvement in all areas.
i didn't do cardio then either. i guess my problem is that i don't know what it is that im doing different now than what i did then.

Also, if you want to KEEP it off you can't just "go on a diet" and then go off of it. It has to be a permanent change, otherwise as soon as you go back to the old habits the weight will come back.
Drinking only 1/2 the diet soda you used to is a good improvement! That's awesome!
The problem is that you're trying to do it the right way now.. so the weight loss will be slower, but hopefully more long-lasting.
Also, you may have had more to lose the first time. It comes off easier the more you have to lose.
If you had really unhealthy habits the first time around, and then went to really healthy overnight the weight would fall off because of the big difference in habit. I'm guessing that there isn't such a big difference in your habits from 9+ days ago and what you are doing now.

The reason it isn't going down now as easy as it did then is that you're older. Our individual biochemistry is constantly changing as we age so the way your body processed and stored food five years ago is a heck of a lot different than the way it does now. It's possible in another five years your body will react differently to the stuff you put in it on a daily basis, but you have to train it to do so. It'll take more than a few weeks of cardio - It's a complete change of lifestyle and a commitment to healthy living.
