lets talk caning soon..I need to know best way to can beets.

The thing about pickling beets is it's a long, messy, labor intensive project even compared to making other types of pickles. They're not a good one to learn on if you haven't canned before.

I am envious of your canning endeavors this summer. So far mine are like this:

Babies produced: 1
Jars filled with things: 0
Local crops entirely missed that I love to put in jars: 2 and counting

Don't be too jealous. So far this is the only thing I've canned this summer, and I haven't produced any babies, just a lot of baked goods and some fancy metal pieces.
