I'm pretty sure the numbering was based on the original languages used in the writing.
As for the Genesis stories -- there are two Genesis stories.
I would recommend that after you finish reading the Bible, or else concurrent with the reading, you pick up one of the historical accounts of the time period and who Jesus is most likely to have been. There are a number of texts that are/were put out by the Jesus Seminars or by members thereof that do a really good/interesting job of talking about the various authors of the Bible, the timeperiods, the language issues, translation issues, and historical fact based on other, concurrent records. I think we've probably got five or six good ones you can take a peek at and choose from.
I was just going to suggest the same thing as Kathy. We have a good start for biblical research. I particular, I recommend God: A Biograrphy by Jack Miles. Just come over to the house and I show you where the religion section is on the shelves.
God's supposed to be an all-powerful being. Why did a) it take him 6 days to create everything? b) he need to REST?!
God's supposed to be all-knowing. a) Why did he not know where Adam was? b) Why did he put the tree of Knowledge in the garden knowing full well that they would eat from it?
You are right... the Bible ISN'T an easy read. There's hardly any plot, there's a ton of filler, and all the characters are painfully one-dimensional.
Just wait until you get to Leviticus. Six chapters are devoted to instructions on slaying a cow. Whee.
