I make a very similar dish, but I add natural yogurt at the end instead of the coconut milk (as I’m allergic to it) and if I have it I stir in some spinach leaves near the end. Yum - all good gut friendly ingredients!

I might have tried yogurt if I'd had any lactose-free or goat milk yogurt on hand and no coconut milk... but it really did fit the flavor profile I was trying to achieve. And it was the lack of coconut milk in the recipe that made me finally realize I was making the wrong thing. :-p

The canned beans would probably have been safe to eat as long as the can wasn't damaged or "blown". Maybe not so flavoursome. I tried a tin of kidney beans that were out by about three years once, and they were fine. Of course, I am of the generation that sniffed and tasted and then thought sod it, that's ok...
