The nutrition network has just given our classroom 3 heads of cabbage. 1 appears to be bok choy, sort of, one is purple, and one is pretty much the normal one you'd use for the "corned beef and..." type of cabbage. I'm supposed to figure out what to do with these to get the third graders to eat (well at least try - "one bite, it's the rule!"). does

It's a low form of torture for the instructor, of course. I echo Teeny's suggestion of coleslaw. Cabbage is usually such a wretched thing. I like it when boiled briefly and put in a sesame sauce, though (for shabu-shabu). Delicious.
