I modified this from a couple of recipes and a couple of ‘hints’ I found in different places. I think it’s approaching Popeye’s territory myself.

Traditionally it’s “red beans and rice” of course, so I wrote this up calling for kidney beans, but honestly if you want to switch it up with a combination of kidney and black beans it’ll taste great! And ( Read more... )

Oh! And would leaving out the liquid smoke take away too much from the flavor? That's the one ingredient I don't have on hand.

Not too much actually; more important if you decide to use boca 'meat' or chicken. The sausage will add a lot of that flavor.

And can I say that I am eating leftovers of this right now for lunch and I am having to fend off my coworkers with a stick.

If you decide to use boca sausage, you'll need more salt and may want more spice in general, but I think it would work just fine with boca or even with chicken instead of the sausage if you adjust for flavor!
