I have paid ALL THE BILLS. Yay for me. Now I have no money to buy food, but my electricity/internet/phone will not be turned off. I can live on rice and home-grown tomatoes for a few weeks ( Read more... )

My mother started her own garden when she moved to Tennessee and the only advice I can give is NEVER grow squash. It gets out of control! We had squash every night for dinner for weeks. And they had to try and give it away it grew so fast and plentiful. Normally I'd say that if you like a vegetable, grow it but we quickly got burnt out on squash, haha.

Bit its good to hear you're finding your green thumb!

I have a great recipe for zucchini and parmesan soup around here somewhere from when my mother's zucchini plant ate the back shed. That was pretty delicious.

LOL I'm sorry, I laughed so hard at your corn 'discovery'. A good quick recipe is corn off the cob sauted in butter with a bit of cream. I also toss in a bit of fresh kale if I have it. (Also, you want to pick it before the kernals get too hard.)

How can you tell if the kernels are too hard? I'm going to end up with about a dozen cobs, so there's plenty to experiment with, but I have never grown corn before. You can probably tell.

If you know how to make a simple tomato sauce it freezes really well. Just prepare, let cool, portion into individual ziplocs, freeze flat on a cookie sheet, label with the date, keep in freeze until ready. Thaw to room temp, heat & season to taste.
