The idea, part 2

I have been giving this some thought, and talked to a few people. One of whom gave me a fantastic idea. I had kind of gone down this road, but never really gotten all that far with the idea. Find a commercial kitchen I can rent cheaply, make the stuff there, and then take it to a farmer's market to sell it. This would be a good way to get ideas ( Read more... )

I have two customers that make their own gelato and sell it by the quart or pint. They use the 16-oz and 32-oz clear plastic deli containers. I'm sure you can buy 8-oz ones as well. You can use a color printer to print on a big label that can wrap around the packaging.

Do you have a supplier for cream and/or half & half? Did I tell I work at a wholesale food supplier? Don't buy cream or sugar at retail prices if you can help it.

I don't have a supplier for anything at this point. I was pricing stuff yesterday, and dairy and eggs are too expensive. Doing a quick cost calculation, I would have to sell it for about $30/quart buying organic dairy and eggs. I was at Whole Foods, so I'm sure I can get a better deal, at Schnucks, or just skip the organic, but I am going to have to get a better deal before I can start selling it.

Where do you work??

I work for Tocco Frozen Foods downtown. We don't do the organic stuff, though. I failed to remember you wanted to do organic ice cream when I posted my reply. Eggs are high right now. They're probably going to be high through the baking season. We sell large eggs loose (tray packed instead of cartons) 15 dozen to the case, sugar in 25-lb bags half & half and 40% heavy cream by the quart, 16 quarts to the case.

I always buy my cream from work. It's about half the price you pay in the grocery store.

I hope I can get to the point where I have to buy that kind of quantity. Of course I might just buy the pasteurized liquid yolks, and make my life easier. I was also thinking that I might check out Costco, since we finally have one, and I refuse to give my money to the Wal-Mart corporation, so no Sam's Club for me.
