Tomorrow my boss is buying everyone lunch from Stefano's downtown where 10th Street Italian used to be. He told me the owner promised he could make me something gluten free. After eating out at Pasta House and Outback over Father's Day weekend, and getting sick after both places, I am not about to eat someplace that's not even trained in the whole gluten free prep thing.
I would say it gets easier, and sometimes it is easier... but a great many times it's really not. Hang in there.
Cooking a really big batch of something (chicken and dumplings, lasagna, mac & cheese... comfort foods are the bomb) that you can freeze and reheat when you don't feel like cooking really takes the stress out of finding something to eat every night.
