Chicken Piccata

wispfox asked me recently how I make chicken piccata. Which prompted this long-winded thing. I thought I'd post it in case anyone else wanted it (or I go long enough to forget what I'm doing).

... huh. Kate and I have been sitting around the house, desperately not wanting to go out in this today, and resigning ourselves to eating out of the freezer tonight. But I *do* have a pound of chicken cutlets in the freezer, and capers, and lemons. Tempting -- thank you!

Your latest version looks like a cross between my chicken piccata recipe and my stir fry anything method (not so much a recipe). Are you happy with it? Because it looks like we could adapt that to Quorn tenders pretty easily.

Smacking the chicken was good on a frustrating day, only I had to be careful not to smite it TOO abruptly or I would be picking bits of chicken off of the table, floor, maybe wall if it escaped the plastic wrap. On terrible, no-good days it was safer to take my frustrations out on bread dough.

I prefer the roux method to corn starch if I have the time, but the cornstarch is fine (just remember the sauce won't be as opaque when you're done). It was originally me finding a way to make a flourless version of piccata (we were briefly avoiding wheat).
