Stuffed pumpkins

Just saw this recommended on my friends list. Pity I didn't see it in time for Thanksgiving! Still, there are bound to be pumpkins around for a little longer yet.

Oh my. Do you think a smaller pumpkin would work as well? We're a family of two here, and not big on left overs.

I suspect a smaller pumpkin would work quite well, as that's what my friend used. :) I'd link you to her entry, but it's locked. Suffice it to say that the photo she took was of a pretty small pumpkin, maybe a little larger than a small casserole dish.
