Ingredients
2 small zucchini
1tsp rosemary (crushed)
2 cloves of garlic (chopped)
1 can of diced tomatoes (14.5 oz) (the ones with basil and oregeno are good)
1 container of Swanson Vegetable Broth
1 can of White Kidney (cannellini) Beans
1/2 cup of pasta (penne, rigatoni, or gemelli works best)
Cut the zucchini in half and then into thick half moon pieces. Using a deep soup pan, sautee the zucchini, garlic, and rosemary until tender-crisp (about 5-8 minutes). Add broth and diced tomatoes. Bring to a boil. Cover and simmer for 10 minutes. Add pasta and beans. Return to boil and simmer for another 10 minutes. Top with parmesan cheese and serve with side of garlic bread.
Serves 4.
