Experimental Phyllo

So, in the spirit of experimentation and using up some stuff in the freezer, I tried my hand at making blueberry turnovers using phyllo dough. I ought to have brushed the dough with melted butter as the package recommendd, but otherwise it was quite tasty and extremely easy. This is something I'll definitely be doing again!

Indeed! Very tasty. The Phyllo comes out very flaky.

Filling:
2/3 cup blueberries (I used fresh blueberries because we had them handy)
1 1/2 tbsp sugar
1 tsp cornstarch
1 tsp lemon zest (omitted for this experiment because I didn't have a lemon on hand)
1 tsp lemon juice (the recipe calls for it to be fresh, perhaps from the lemon I should have just grated the zest from, but I used bottled instead)

I combine all ingredients in a bowl. Then I folded up a large spoonful of the mixture into phyllo dough that I then folded like a paper football (or like a flag for you purists out there).

The phyllo dough I got from the freezer. By my count, we've got something like 480 sheets of the stuff. I'd say it's paper thin, but I'm not sure it's that thick.

By the way, I've also made a recipe in the past that was mashed potatoes inside of phyllo dough pockets and then baked. Since fresh mashed potatos freeze very well, this is an interesting little "hot pocket" you can make ahead, freeze, then bake when ready later.

We're already thinking of making up a bunch of these little guys and freezing them. They'd make tasty little dessert treats. Or breakfasts. The kids will love them, I'm sure. (The boys are off visiting their cousins right now.)
