I can't stop thinking about chocolate chip cookies, probably because of the photo in this blog post, which led me to this one, which led me to wonder if Jacques Torres' "Perfect" chocolate chip cookies could possibly be better than my mother's chocolate chip cookies, which are generally regarded as the greatest thing ever by anyone who eats one ( ( Read more... )

I did that NY Times recipe and only used one type of flour, but refrigerated it for the 36 hours. After coming out of the oven, the cookies were insane. They were almost caramel-y and had a lot of depth and the salt really heightened the flavors. But then once they got cold, they just tasted like normal cookies. I'm not sure why that is. Probably my uni-flour.

Yours look amazing though. Maybe you should just make some of that dough and stick it in the fridge for 36 hours, see what happens.

You are a genius. That is exactly what I will do. I might sprinkle a bit of salt, too - that part does actually sound really great.

My mom's cookies are usually even better than how this batch turned out: because I am lazy and also because it was late in the evening, I only made a half-batch. The problem with halving this recipe, is that the full recipe only calls for one egg. Obviously, I should have beaten the egg in a separate bowl and only put in half of it, but I didn't do that. So my batter was a bit too eggy, and the texture wasn't all it could be.

making sure to turn horizontally any chocolate pieces that are poking up; it will make for a more attractive cookie.

Man, I am a perfectionist baker, but that sounds crazy. It all looks the same in my tummy, Jacques.

I know! Don't get me wrong, I am a huge baking snob - I deride the use of fake vanilla and mixes of any kind. But this kind of anal retentive nonsense is the opposite of what cookies mean.

I bet Jaques Torres is one of those joyless types who doesn't even enjoy a good cookie anymore.

So I thought maybe I'd make a batch and see how it turns out. BUT DID YOU READ THAT FUCKING RECIPE? There are TWO kinds of flour in there, and you have to refrigerate the dough for 36 hours! What the hell?

After you make the cookies, do they clean your house and make your bed for you? Then maybe they aren't worth quite all that. :)
