SAUERKRAUTIt didn't take. The brine, which I was so optimistic about when this started, either evaporated or reabsorbed, exposing a couple of inches of the top layer to air, which is bad. I racked off the wine today. I didn't take a hydrometer reading yet, but it tastes like it fermented dry. It tastes pretty good, except that next time I'm going to use less water.
