Looks nice! I feel like whatever goes on top should feature aubergine or lamb or ideally both.

The recipe is for chicken, which is I guess why he uses chicken stock.

I can see why you think lamb though, I think it wants something a bit robust and flavourful on top to complement the strongness of the mint. It's a fairly slow cooked thing though so I think the spices used may be more important.
