cheese and milk

I am a bit of a cheese head. I like most cheeses - don't like blue or "stinky" cheeses, but most others will happily slide over my palate. I consider "Velveeta" in the same category as Bud/Miller/Coors.

Actually there are raw cheeses available. Make friends with your local cheese shop people. You'll see what I mean. That being said, it is illegal. Also that being said, i do not want to go back to the days when we all had TB.

I love cheese. I swear to robin's dog.... the cheese cart at Le Bec Fin is a little bit of heaven.

with modern production methods and antibiotics, chances of TB are higher by traveling in a plane!

I'm not a huge fan of modern production methods and production-use of antibiotics! I also think planes are less of a risk for tb than your average city bus.

Is this bill still stalled? I'm not sure what the laws are now but I've definitely seen raw milk cheese sold in NH and I think MA too. I'll have to look more closely next time I go shopping for cheese. I'm not a fan of the stinky washed rind cheese or bleu cheese. I've at least gotten to the point where I can eat some of the milder blue cheeses now. There was one triple-creme bleu (from Germany?) called Montagnolo that was amazing. Loved it so much and then they discontinued making it. Just my luck. Cambozola is the closest thing I've found to that but it's still a pale imitation to my memory of Montagnolo. Cambozola is mild and creamy and works well for when I make pizza topped with fresh figs, prosciutto, and bleu cheese. Anyhow...your profile page mentions that you've moved from Edinburgh to Birmingham, AL, and I'm curious as to how that happens. So I added you to my f-list.

looks like it stalled out. So annoying....

There's a buttermilk blue cheese sold in Earth Fare that is amazing - sweet and tart with blue cheese funk. Try it with a good farmhouse ale or a Saison :)
