Alright, I just finished testing the specific gravity of my Honey Maple Mead, and racking it. Gave it a quick taste, too. I think, with a little aging, it'll be very nice. It seems to be fermenting fairly slowly; I've heard of some people using yeast nutrient to speed up fermentation times. I don't know if I want to do that though; I'm somewhat ( Read more... )

I've just added the yeast to my next 3-gallon batch of mead. This one's my own recipe; 3kg of honey, 5 apples, 12 cloves, and one stick of cinnamon. With any luck, it'll taste kinda like an apple pie.

Specific Gravity at time of pitching yeast: 1.080

Aaaand here is a picture of my Maple Syrup mead so far. Darker than the plain honey one, but I think that'll settle out eventually. If I'm right, it'll end up a nice clear dark amber color.

Well, apparently my uncle who works for the MLCC as their wine expert and his wife really like my Earl Grey mead. So much so, in fact, that he's commissioning me to make him a 5 gallon batch. He's lending me the use of his 5-gallon carbuoys and giving me the money to purchase the raw materials. Looks like I done good. ;)
