For anyone who likes chocolate and spicy food, try this:

Mexican BrowniesMelt 2 sticks of butter in a medium-size microwaveable bowl. Whisk in 3/4 cup natural (not dutch-process) cocoa, 2 teaspoons ceylon cinnamon, 2 teaspoons ground ancho chile pepper, and 1/2 teaspoon cayenne pepper. Stir in 2 cups of sugar. Hmmm...perhaps I shall make these for Jamie. I'm less a spice fan than he is. How hot are they, on a mild to FLAMES!!-type scale?

So, as someone whose kitchen has not yet made the jump to premium spices, any suggestions for adapting that to generic-brand spices? (e.g. what's the difference between generic cinnamon and Ceylon cinnamon?) Sounds interesting, but my kitchen is still stocked with McCormick spices.
