it's cause good friday represents the day that jesus made the ultimate sacrifice for his love for us.
taking the time to sacrifice a day, realizing that you are doing so, for him, is kinda how catholics (and me) look at things. it's a small version of fasting, or abstaining in reverence for someone who gave up everything for us.
it's not necessary, but just like any tradition, they are there to help us look into ourselves and outward a little clearer by defining something so spirtual into something more physical and materialistic.
