There's something called a tea egg. Some of you my be familiar with it, as it's a traditional Chinese snack. I am absolutely smitten with the idea. For those who don't know, a tea egg is a hardboiled egg that's been cracked, and then simmered in tea, tamari and various spices (cinnamon, star anise, etc.) for about three hours. My mom has made tea eggs for me, though if I were you, I'd soak them for more than 3 hours. (At least overnight.)

I think you simmer for just a little while (20 mins? An hour?), and then put them in the fridge and let them soak for at least overnight in something with a lid. :D

ffff oh my god I want. Tea leaf eggs are absolutely amazing. The food has to be the thing I miss most about China.
