Like most vegan and vegetarian people who work in the food industry and/or consider themselves to be halfway decent cooks, I really hate Anthony Bourdain. For me, it's not a matter of OMG HE EATS THE MEATS, because...well, a lot of people do that, so it's not reason enough for me to be drinking Bourdain hater-ade. I agree with you.

Also, to the best of my knowledge, in his (un-needed defense) Bourdain specialize(d)/s in french cooking, which, isn't exactly vegetarian/vegan friendly...at least, not traditional french cookery.

Yeah, French cooking is totally not vegan friendly. Also, my boss told me that a lot of culinary schools in general over-emphasize the role of meat and dairy (or at least that was his experience). Still, though, you'd think a "gonzo chef" that prides himself on being adventurous would like the kind of challenge that cooking for vegans presents.

I can't speak for every culinary school. But, while at JWU, the vegeterian and/or "healthy" culinary classes were only offered to those enrolled in the bachelor's programs, and not those seeking an associates degree. Nevertheless, based on my industry experience, and talking with others in the field, your boss is right.

Myself, I like cooking for everyone and anyone. Nevertheless, I find it most troublesome cooking for those afflicted with Celiac disease.
