Using the word choice is indeed not appropriate. It's first of all insulting -- why would any reasonable/rational human being choose a life that guarantees them scorn from fairly large segments of society? The answer is that no reasonable/rational human being would choose such a life, and thus claiming that transgendered persons are choosing their "lifestyles" is implying that they are irrational or illogical (and therefore unreliable, etc etc).
Second of all it is inaccurate. There is a growing body of scientific evidence that biological/evolutionary factors play all kinds of roles in gender identity. That the research is slow and relatively infrequent is only a testament to how difficult it is to get anyone to care enough about these issues to provide funding for it.
There is choice involved in coming out, but that's not the same thing as being transgender. I don't even understand why this trainer would need literature or examples -- just ask her, did she choose her own gender? If not, what the hell makes her think other people

I googled "transgender choice" and found some good links. In particular, here's an article by a FtM who transitioned that explains that he didn't "choose" to be a man.
