In a turbo-boost towards healthier living, my household has switched to a 100% plant-based diet, i.e. whole grains, fruits, and veggies, minimal processed foods (where exactly does rice-in-a-bag fall on this scale?), minimal salt, and no animal product. It is so perfectly appropriate to say that those chicken things are the consistency of a lung! I made that observation in high school, over a friend's McDonald's McNuggets. She didn't appreciate it very much. :-/

McNuggets are the worst. I've had them once or twice and their meat isn't even white. It's gray. Like a squirrel.

Oh, good luck!

Almond milk, by the way, is awesome. In something like coffee, it would probably be outstanding. (I don't know, because I drink my coffee black.)

I am not a vegetarian but I do cook a lot of meatless meals, partly because of my son who has been vegetarian (not vegan) for over ten years. But also because I enjoy food without meat, due to qualms about the yuck factor inherent in eating it. I just can't/won't cut out meat entirely and definitely can't let go of fish and dairy and eggs.

Having said all that, I highly recommend a product with the brand name Quorn. It is some sort of fungi based food so I believe it is vegan. They have a round roast that I cook on Thanksgiving as a turkey alternative for my son, and their crumbles are the best ground beef alternative I've ever had. In fact, we prefer them to actual ground beef now. They also make cutlets which are excellent alternatives to chicken breasts. The only problem is that their stuff is expensive (but worth it) and often hard to find.

Hmm! I'll have to see if they're available in these parts. I'm still on the hunt for a decent tasting meat substitute. :)

I also have a feeling fish and eggs will be making a comeback.
