Any suggestions on how to stop burning the bottom of our banana bread?
It happens EVERY time and I'm sick of it!

No matter the recipe, it always burns before it's done in the center.

We have used metal loaf pans and glass loaf pans, it's doesn't seem to matter. (standard 9x5 size)

Have you checked your oven temp for accuracy? Some ovens can vary quite a bit.

If you are using dark metal or glass pans try lowering the temperature by 25 degrees.

Our oven does tend to run a bit hot. But we've tried baking it longer at lower temps and the burnt bottom still occurs.
Our recipes usually state 400 for about an hour. We've knocked it to 375 and even 350 and just had to bake it longer and it still happens. So frustrated!

If you don't already have one, invest the $4 in a hanging oven thermometer. It sounds like your oven runs weirdly hot. I would turn it down and make sure your loaf is not too close to a bottom heating element?

350 is standard baking temp, I can't imagine a banana bread recipe calling for 400!
If you're using glass or a dark pan take it down to 325.

Do you use parchment paper?

No typically. Would making a parchment sling help with the burning?

It helps with mine. The recipe I use has sugar, bananas, and chocolate so the bottom tends to bake quicker/burn easier. I line the pan sides and bottom with parchment paper and it helps. It puts a nice buffer between the bread and pan. Don't spray it or grease it.

Yes, this. And maybe it's baking too low down in the oven.

Try a smaller pan. Two smaller loaves will likely bake in less time than one big one.

My mom told me this after I kept doing the same thing (or the middle would be mush when the rest was perfect): if you're baking at 350º, after 15 mins, lower the temp to 325º and let it keep baking. From what I remember, that did the trick.
