Dinner for the in-laws

Hi all. I need something that is good, will have leftovers and be good for a group. I'm making dinner for my in-laws, my mom and my husband. (I doubt I'll find something that I'll enjoy to make as well, so I'll make something separate for myself) It will have to be cooked in under 3 hours and um, it would be good if it could be kinda easy since I ( Read more... )

Well, I was going to recommend the roast beef... :)

How about some kind of homemade spaghetti sauce with pasta (maybe a baked penne type dish), then use the leftover sauce to make pizza or meatball subs?

My no fail easy one pot dinner is Jambalaya. It takes an hour from prep to finish. I usually use ham and Hilshire Farms smoked sausage, but I made it the other night with chicken that I poached in water and then shredded with forks instead of the ham. If you don't like spice you can cut out the cayenne, but if you make as directed it's not too spicy, I usually add extra cayenne plus dried red pepper flakes since I like it really spicy. It's my Mom's recipe, I grew up eating it, and I make it all the time for my husband. If I'm having company over I'll make it and people always ask for the recipe. My Mom would make this with 3 kids under 7 while my Dad was at work, you can walk away and come back. /edit I almost forgot, I don't like green peppers so I leave them out ( ... )
