Pumpkin Puree

My mother, who truly can cook and has done most things from 'scratch' will tell you to forget baking up your own pumpkin and go buy canned pumpkin. My mom actually just cuts the top off and bakes the whole pumpkin. Produce guy recommends steaming it.

I did read an article once where they compared pies made with canned pies and pie pumpkins - and they couldn't tell the difference.

If I have pie pumpkins (and well, I do) I will cook them, but otherwise canned is just fine.

The vegetable cook book I linked to above gives methods for cooking them whole and for steaming them. It's out of print, but not terribly expensive on Amazon.com marketplace. There are also recipes for pumpkin that do not involve puree-ing it...
