Zucchini Apple Muffins

This recipe is modified from the zucchini bread recipe in An Apple a Day; The Women's Auxiliary to the Medical Society; County of Erie; Buffalo, NY, 1976

2 cups sugar I used 1c maple sugar and 1c Splenda
1 cup oil I used 1c unsweetened applesauce instead of the oil
3 eggs
3 cups grated zucchini
1 small apple - diced

Btw, I'm completely certain at this point that the 3 TBS of cinn was a typo in the book. I'm guessing it should have been 3 tsp, though I normally use 1 TBS these days.

I used three tablespoons - tastes yummy enough, but you're right, One Tablespoon would have been fine. I also used applesauce instead of the oil to wonderful results.
