I'm not sure if I've put this in my journal before. I don't think I have, it's certainly not tagged.
I'm just waiting for a tray of muffins to bake so here's the recipe:
Ingredients:
2 cups plain flour
1/3 cup packed brown sugar ('packed' means to pack it down into the cup, not how the sugar comes from the store)
1/3 cup granulated sugar
2 tsp baking powder
1/2 tsp salt
2/3 cup milk
1/2 cup melted butter
2 eggs, lightly beaten
1 tsp vanilla
1 pkg chocolate chips (I generally put 2 100g bags in, or a smashed up 200g bar of Bournville. The original recipe includes an optional 1/2 cup of pecans but I ignore that as crazy talk)
Preheat oven to 400 degrees. Line muffin tin with cupcake papers.(Don't know where I read this piece of advice, but I always line my muffin tins with two paper cases)
In a large bowl, stir together flour, sugars, baking powder, and salt. In another bowl, stir together milk, eggs, butter, and vanilla until blended. Make a well in the center of the dry ingredients; add milk mixture and stir just to combine. Stir in chocolate chips.
Spoon batter into muffin cups and bake 15-20 minutes. Cool 5 minutes before removing from cups. Eat!
