My family roasted chestnuts for the first time at Thanksgiving. According to the recipe we found, you're supposed to slice across the shells in an X shape before you roast them. That way, they don't explode, and the shells sort of curl back in a cute little way.

What she said. My mom roasts chestnuts all the time, and that's how she does it.
