I'm an American in the UK too, and while I never ever want to live in the US again, there are still things I miss. Like mac and cheese. Other than my family, the things I miss are mostly food.

That being said I've met loads of Americans here who love America, and we always get along well.

To some extent it probably depends where you're from as well. I'm from Philly and if I had to compare Wales to there, there is simply no comparison; I'd stay in Wales forever given the two options. But compare it to (say) Oregon? That's a tougher choice. Maybe if people lived only in places they hated, they're more likely to be rabid about things.

Do you not have mac and cheese often? I eat mac and cheese at least once a week here! :-D Mexican food is what I miss the most.

Yeah, I was making some very broad generalisations!

Where do you get it?! My parents mailed me some ages ago but it was massively expensive. Then another time, I brought back AN ENTIRE BOX of random american food (mac and cheese, rice a roni) and the guys at the border made me open the box and asked me if I was smuggling meat (?!) so I'm scared to try that again ( ... )

As an American of mixed descent (Being British, Italian/Sicilian, Greek, Irish and a smidgen of German), I totally understand and to an extent it depends on where you are from as well.

I wish being American doesn't have to be an all or nothing option either.

You nailed it.
I've done both at times...now trying to walk a thin line between the two. Maybe it's a biased perspective, but it also feels like people by default try to pigeonhole you into one of these two categories.
Personally, I left to be hipster but definitely see myself going back some day.
