But what if your 'individual co-workers' are your friends, and you would have had negative things to say about them even if you didn't work with them?

You've got a good point. My main thing is that when I post shit online or text, I'm not at work, and not on the clock. So who are they to dictate anything I do? It's the same thing at the end of the night. After close, you can't leave by yourself, you have to wait for someone. The job I do, most times I'm by myself, so I get stuck, off the clock, sitting around waiting for someone to leave. Liability aside, if I'm off the clock, why should I have to do anything deemed by my employer? I get paid hourly, not a salary, and this is a job, not a career. No pay, no stay.

Very true. I wondered the same thing when my old job told me I wasn't allowed to post that I was employed by them, because they were afraid that we'd say bad things about work and people would make the connection. And that is pretty much just bullshit that you have to wait for someone else...I'd be staying on the clock for that one.
