You'll work yourself to death making potato chips on a mandolin, and prolly ruin the mandolin, too. Just get a food processor....one of the varieties with an overhead slicing disk.

Though, the problem you'll run into is: "foodie" and "reasonably priced" don't go well together. If you want to spend less than $75.00, you either should resign youself to getting cheap crap, or reevaluate the worthiness of a "good sharp knife" as a "reasonably priced slicing apparatus." ;)

What sort of scale are you looking to slice on? If its for low-intensity personal use, you could get a decent 3-cup food processor within your range.

I'm looking to slice a couple pounds of taters once in awhile. Nothing fancy. I just can't seem to get consistently thin cuts with the knife without taking a very very long time. It takes all the joy out of making it.

I had considered a food processor, but I'm not sure if it would slice thin enough or be able to handle a whole potato.

As for foodie/reasonably priced, I don't think the two are mutually exclusive. There are a lot of inexpensive simple devices that do their jobs exceptionally well. It's more a matter of durability than anything else that influences the prices of these kinds of things, and that's where my light use of it should allow me to save a little money.

Of course, I'm also going to get my knives sharpened and work on my knife skills.
