Star Trek TNG is a great choice for a favourite. I used to love it as a kid and I think it has a lot more depth than all the other Star Treks. You're 100% right on the Riker's beard law though, haha.
I really just got into Legend of the Seeker, but I guess it was a good thing that I watched it before reading the books. Have they changed much?

I like Voyager a lot as well. They didn't have as many truly memorable episodes, but it was still a great show.
I haven't watched much of it. Only one or two episodes to confirm that the characters are all a bit on the silly side (which is never the impression given in the books) and so completely different from how I imagined them that it's almost crazy. It's like making a sitcom of Pride & Prejudice where all the characters are Kenyan marathon runner who just happen to spout Austen-esque phrases and wear lowcut dresses, lol.
Maybe I would have liked it if I'd never read the books.

Voyager was the second best after TNG, but I lost interest a lot faster.
You're right saying that they're a lot more silly than they should be. I think they got a bit more serious as the first season went by and the second started, but I'm always under the impression that they don't go into that much depth when dealing with things. I still like the series and I'm 100% hooked, but I'm sure it's because I have noting to compare it to. I'm going to try to read the books once I'm done watching it.

Star Trek TNG is one of the few shows that I will watch over and over again. I love the episode where people keep disappearing around Dr Crusher. A big favorite is the one where Picard lives a whole lifetime in another Universe. He falls in love, gets married, has children and grows old. And he never left the bridge. It was a real tearjerker when he played the flute at the end.
