yummiest chocolate chip oatmeal cookies

I just made the YUMMIEST chocolate chip oatmeal cookies today. Not too much oatmeal. Nice and moist. Not crunchy, but chewy. I have to share the recipe. :)

Chocolate Chip Oatmeal Cookies

Ingredients
  • 1 1/2 cup flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup vegetable shortening
  • 3/4 cup brown sugar, firm packed
  • 3/4 cup sugar
  • 2 eggs

the best thing about cookies is that they are so easy to bake, rather than trying to do a cake or something.

i thought i'd tried every possible thing. from adding extreme amounts of crisco (gawd, VERY GROSS) to undercooking it to make it chewy. now that i know the real thing, i have an urge to make cookies.

yeah, i don't know what it is about the bread thing that works, but my co-worker taught me that trick. i guess it keeps moisture with the cookies or something. but undercooking it a tiny bit does help too. crisco is pretty nasty. :)

along with my recipes i have exercise tips too. ;) well, they were from my last year's exercise program, which worked and i lost some weight from... but that we before i went on this cooking binge. heh. then again, i was eating fruit and protein bars all day. *bleah*

share too, plz! Exercise tips are always good, except that none of them happen to be do-able while glued to an office chair, do they? (even though I sometimes do tummy contractions during mtgs) I remember last year's entries (and the one before that) and the inevitable common spring quest for toning. I don't think that either of us looks like we need to lose weight, but it's just that sludgy feeling. Which I'm feeling right now 'cause I think I ate my way through Boston last week.

C and I have been talking about low-fat recipes, though. :) I refuse to let my love of food to collide with my guilt conscience. *double bleah*!

Just happened to stumble across your LJ and thought I'd make a suggestion. Chop up some dried cherries and throw it in the mix. The tartness of the dried fruit complements the sweetness perfectly.
