I’m starting writing about this a bit late into this particular journey. Denial. While getting ready for work a few weeks ago, NPR started talking about Celiac Disease. Ah, but! There are gluten-free ways to have things like cake and pizza. Not sure about udon, though.

I've seen some of the gluten-free options at the store. The thing is they are sad. I'm re-heating my nasty gluten-free pizza right now for lunch. Being the food slut that I am, I know that many items will never be comparable to the things I ate before. I suspect the key is to find the naturally gluten free foods. Nate has recently discovered polenta, which is a fantastic substitute for pasta, but is tastes nothing like pasta. And some items there will never by a gluten-free version. Like I doubt that I will ever have chinese dumplings or bao. I had wrongly assumed that rice flour was used to make these items, but it is rice flour with wheat flour that make asian noodles and pastries awesome ( ... )

This is true. Many of the alternatives are less than ideal. I've a celiac friend in NYC who seems to experiment a fair bit, and posts about it when she finds something fantastic.

I wish you luck, though. I can't imagine the transition is easy, but it's a fair sight better than getting sick every time you eat!

Yeah, rm commented on my other post already. With the diagnosis, I suddenly remembered that she was diagnosed back in 2006 and came back to see if she had celiac links on her blog info or anything.

And I've been away from this place for too long. Most of my old LJ friends have disappeared, a reminder that virtual friends are rarely more than that. And the fandom has changed, from Baz Lurman to Torchwood.
